Red Garlic of Sulmona, unique variety in Italy, it is possible to recognize it from the characteristics tunics, of purple-red colour, which wrap every single clove. It is the most valuable and appreciated species among those produced in Italy thanks also to its incomparable peculiarities.
Rich of essential oils, with smell and taste particularly penetrating, has a long-life shelf. An important ingredient for cookery, but also and especially is a natural medicine. Has antiseptic, anti-tumor, expectorant, fungicidal and bactericidal actions as well as being an effective regulators of blood pressure.
It is a typical product, many used in Abruzzo’s cooking. After the typical red tunic has been removed, the cloves of garlic are immersed for a few minutes in a solution of water, salt and vinegar, reduced in cream and mixed with our best extra virgin olive oil. The mixture obtained is then packaged in specific jars.
Red Garlic of Sulmona has an intense aroma and a very delicate taste. It is used to make first courses, especially for those with legumes, and for bruschetta.
