Red Garlic of Sulmona, unique variety in Italy, it is possible to recognize it from the characteristics tunics of purple-red colour. Its fruit is made from many cloves which all together make one bulb, the strong intense smell is its feature best known. Since ancient times, garlic has been appreciated not only as a food, for the characteristic taste which gives to the dishes, but also as an healing plant.
In brief, this plant human’s friend, thanks to all properties which lend it its active ingredients (allicin and derivatives), carries out activities such as: antiseptic, antibacterial, anti-tumor, mucolytic, hypotensive as well as being an effective regulator of the cardiovascular system.
It is a typical product, many used in Abruzzo’s cooking. After the typical red tunic has been removed, the cloves of garlic are immersed for a few minutes in a solution of water, salt and vinegar, then they will be placed in jars and preserved in our best extra virgin olive oil.
Excellent to serve as appetizer, good to accompany meat and fish dishes, delicious to season grilled or baked vegetables.
