Red Garlic of Sulmona is the only italian variety of garlic which emits a flowering stem, locally called Scape or tolla o zolla. This so delicious fruit can be eaten fresh or preserved in oil. Scapes have a less strong taste than garlic but they maintain the same pharmacological properties of the mother plant. They have antiseptic, anti-tumor, expectorant, fungicidal and bactericidal actions as well as they are an effective regulators of blood pressure.
They grow in the inner part, in the middle of the plant, so their colour is pearly white at the bottom and gradually, going toward the tip, take on a nice bright green colour, cm. 8-10 of length, they are soft and delicate, with a slight taste of garlic. To prepare Scape’s cream we only use the most tender and best parts of flowering stems, with the exception of the final part because it is too hard. Once they have been selected, Scapes are cut into pieces and immersed for a few minutes in a solution of water, salt and vinegar, crushed until obtain a smooth and light paste. The mixture obtained is blended with our best extra virgin olive oil and packaged in jars.
The cream of Scapes is suitable to accompany red meat dishes and aged cheese. Excellent on bruschetta and croutons.
