Stuffed potatoes


  • 4 potatoes medium size
  • 50 g of grated parmesan cheese
  • 2 eggs
  • 2 fresh sausages
  • 1 clove of Dimarino red garlic
  • Parsley
  • Breadcrumbs
  • Stale bread
  • Dimarino extra virgin olive oil
  • Salt
  • Black pepper



Wash and boil potatoes for at least 20 minutes, drain from the water and let them cool.  

Meanwhile, pour some extra virgin oil in a pan, add the peeled and cut thin garlic and the crumbled sausages. Let cook for some minutes, when the meat is brown turn off the fire and put aside for a while.

Cut in half the potatoes and dig them inside retaining the excess pulp into a bowl. Squash the pulp with a fork, add the eggs and mix. Add the parmesan cheese, the chopped parsley, crumble the stale bread, add the cooked sausages and a bit of black pepper. Mix well everything.

Place the dug potatoes on a baking tray lined with greaseproof paper and salt them, both outside and inside, take a potato at a time and fill with the mixture. Sprinkle with breadcrumbs to taste, pour some olive oil and bake in a preheated oven at 200 degrees for about 20 min.
