Fried eggs with asparagus

INGREDIENTS FOR 2 PEOLPE

  • 2 eggs
  • 200 g of wild asparagus
  • Extravirgin olive oil
  • Salt

 

PROCEDURE

Clean out the asparagus and remove the hard part, cut and boil them in water for a few minutes.

Pour a few blades of oil in a pan and fry  a while the asparagus, add the eggs , a pinch of salt and let it cook. Serve the eggs with asparagus piping hot and enjoy it!!
